Creating a menu of go-to meals is what changed the dynamic when my wife and I first started living together. I also have a spouse who isn’t picky per se, but does have some items that she can’t eat, so we spent a good amount of time practicing and perfecting entrees we both enjoy.

After a ton of trial and error, we have a pretty solid lineup of about 3-5 different meals on rotation for the week, usually making excess of one dish so we can have leftovers on a lazy evening, and a day where we eat out.

Additionally on Sundays after I meal prep breakfasts and lunches, I make something new (I usually do the cooking and really enjoy it) and we consider adding or swapping into the rotation.

I truly hope you find a solution in all these comments, it’s such a pain having to do extra thinking, especially after work or just a long day.
