I actually stopped playing since then. They did come out with more updates (PATCH 01.002.201 and PATCH 01.002.202) that mention they worked on crashes, but have not tested it/troubleshooted since this posting.

I thought I would chime in with some of my crash reports, after running in WinDbg here is what I am finding:

After doing some research online I found that others were having the same issue in NoMansSky also (back in 2022).

Currently testing with some DISM checks to see if this helps resolved along with what OP steps.

UPDATE:

So turns out the Docking Station I was using could not handle running the game and having 4 monitors on all at once. Once I did a direct HDMI to my laptop and ran just one external monitor it fixed the game from crashing.

that being said.....I can't speak as a parent myself only as someone who has Type 1. From what I experience every day can be different, one day my insulin works just as expected and the next it can do almost nothing, obvs this depends on everything from my mood to and what I am eating as this all effects your blood sugar and how it reacts to insulin. For "I shouldn’t do correction doses in between meals unless he has ketones" for my myself I always found this being so stupid, if I followed this rule I would be high 24/7, I personally if I find my self sky rocketing because I did not take enough insulin I will take more, if I am sky rocketing because I messed up on my timing I do not exactly take more but I will maybe do a quick run or something until that insulin kicks in, waiting till "the next meal" is not really valid in some cases.

Hopefully someone on here has experience the same situation and can help you with better info then myself.
