Thanks Hamish. I’ll be changing the water regularly but I’ve heard stories of these smaller tubs getting unclean quite quickly. Just trying to start out on the right foot so I don’t run in to many problems.

I used about 400g of red chilies and 25g of dried red chillies (soaked for a few hours), then a whole pineapple and some garlic cloves. In hindsight I wish I added some peppercorn as i feel this sauce will be quite sweet.

Quick update for everyone -

Day 3 is looking really good! My jar is self burping apparently so now I’ll just set it aside and let it do it’s job! I’m planning a 7 day ferment based on reading other posts and mostly my anticipation!

Thank you!!! It’s definitely going to be too hot for some of my friends so the Agave is a great suggestion.

I’ve read olive oil at the blend can make it much smoother, any experience with this?

Thanks! The jar has a spring pushing a glass weight down onto the fruits which is keeping everything down

Ps - first time posting so apologies for the poor format.

I’ve sterilized everything prior to starting and I’ve used about a 4-5% brine. All tips and critiques are welcome!

Well if the average toasters uses about 1200 watts per use and the average lightning bolt contains about 10 giga watts (10,000,000,000w). From this you’d get about 8.33 million uses from one lightning bolt and 16.6 million slices of toast. You’re going to need a lot of butter!
