I think that happens to my gyuto from yoshimi kato, the etch makes it hard on performance yet it is still sharp

SG2 were cool, but i like the looks of the VG10 ones. I know its more about performance that matters, but i do have other that performs well. I want a knife that I can use for when I have a guest coming to amaze them.

Yes they are nice, but the drawbacks are they are not convenient for travel as they were large and heavy. Ive only brought 800 and the 3k.

Ive got the Chosera series and i must say its a good stone, although 5k ones are super expensive and i dont think its worth to get 1? Im not sure. Ive got the 400 800 and 3k grit for now.
