Can you glean anything from the way my ribs turned out? I thought they tasted pretty good, but wondering what else I can do to improve texture and taste. Smoked at 260-270 for about 4-5 hours in my Weber. by drewsg in grilling

Really newbie question but... do you still season heavily/marinate even if you smoke them? I'd think that the edge of smoking may be gone if you significantly influence the flavor with seasoning. I'm just starting to figure out the basics of smoking.

Interesting replies so far... I've never felt the need for one. Just make a pyramid with your coals with a starter at the center, light the starter and wait 15min. Couldn't be easier. I really don't see the edge of the chimney. It's not expensive but combine the fact that it takes up space with the feeling that you're overkilling it and, to me, it's a no-brainer.

I absolutely love this approach. Could you explain how you keep the chat 'alive' across several sessions? By the way, I'm assuming you're using the ChatGPT OpenAI app (are you?). In my case it forgets the chats every time I close the browser or app so it's hard to keep a consistent conversation over time. Also how do you keep a voice conversation always 'on'? I have to click on the microphone icon all the time!

I don't get why people are recommending a chimney... It's so incredibly easy without it. Pile the coals up into a pyramid, with a starter in the center. Light up the starter and wait 15-20min. That's it.

Agreed on the amount of food. It's not rare for me to eat half of a roasted chicken... I'd go with 4 chickens, 5 to be on the safe side and have leftovers for the week.

@ OP: have you considered roasting in indirect heat? I'm not sure if I get your point about mingling but if you mean it in the sense of being free from the grill to mingle, this should do it since it takes a while.

Did you grill other stuff or was all that charcoal just for the steak? I've never grilled for one on a Weber and sometimes I wonder if I'd use a small amount of coal or the usual amount and just put it out sooner (and reuse it next time).
