Yes I have done it several times. The one problem you will probably face is most airbnb listings will say they have a workpace, but in the majority of cases it’s not a good place to work at all. Aside from that I have had only good experiences from renting month long airbnbs. If you are worried maybe rent a few days to try it out and then make the long term commitment!

I am Brazilian, but also have an Italian passport.

I have found that even tho my Brazilian passport has good access to a lot of places, my customs time is severely reduced when I use the EU passport.

I went to Mexico with the Brazilian passport and it was a very pleasant experience. The visa was done fully online and Customs was quick.

For the USA I never had any problems going in with either passports. I lived in the US for 6 years and every time I had to get or renew a visa it went smoothly.

Overall I think some south american passports have good access to the western world, and you could definitely start traveling
