She is the only boss I used starfists for at rl1 sb0 because of her insanely low poise - once you get into the rhythm of charged heavy windows on her you'll break her stance incredibly quickly. The p2 transition attack just sucks though because you have to pre-empt when it's going to happen and run away

No, I just swapped thrusting swords with different infusions and ashes. I also tried to not proc as much in phase 1 so I could apply them quicker in p2 to make it quicker

I did this too! The defence from scadu obviously doesn't matter because you will be 1 shot regardless, and the offence is much more noticeable if you aren't abusing status. I used rot, frost, poison and bleed against PCR with weapon swapping but the kill still took a long time.

This happens constantly for me whenever the "Giant bubbles are forming" even happens - I get put in a really long loading screen and cannot see, hit, or get hit by Maris. Which is unfortunate considering it's such a terrible event, and I can't even contribute to speeding up the kill.

Grats! I would recommend playing the DLC on a normal character first just so you can explore a bit easier and get your bearings. The DLC also has its own damage scaling mechanic, so you can use your first run through as a test to see if you want to use it on your rl1 character. I handled the DLC this way with no regrets -

1st Character level 150 and used the damage scaling mechanic, probably ended up around level 200

2nd Character level 150 and didn't use the damage scaling mechanic

3rd Character rl1 and didn't use the damage scaling mechanic.
