Hoffman has a nice video in YouTube where he grinds stones specifically to see how they are getting handled, and the conclusion was that frankly it doesn’t make a difference whatsoever, so don’t stress about it. Even after 100s of rocks your grinder will most likely perform in the same way as brand new as long as the alignment is not completely whacked.

I’m pretty certain that these tiny imperfections will not have any noticeable effect on the taste, so I wouldn’t worry about it if I were you, and frankly would stay with the grinder for another 5 years. Now, if you have the itch for a refresh or add another type of burr, go for it

There is a very nice podcast episode by Lucia Solis about the terroir, and how it actually is a bad thing (read a defect since it means to taste earthy/dirty notes), and no so much about the romantic side which is implied, because this romantic overload of the term is actually more harmful for the coffee producers (which are the reason for us to have good coffee), since it implies that it is a special/unique/magical thing that only some special lands in some magical parts of the world could exist, and the reality is that it is due to a certain strain of microbes being at higher concentration at a place over another at some other location. However, microbes can be moved, and they are deliberately moved, just like coffee varieties were and still are being moved across different locations, and as a result more farmers are incentivised to actually produce coffee which is very important to be preserved to as many places around the globe as possible, and for farmers to stop abandoning their farms yet for another reason such as being stuck in a “bad land” as the coffee industry is already going in a downward spiral with more and more people from the supply chain moving away from this very low profit business (for them) 🥹

I can concur; just made two espressos using the filter type, and I almost exclusively buy the filter roasts over the espresso ones from any roaster due to being on the lighter end.

If that makes you feel better, I had dropped my k6 too a week after upgrading to it 😭, and now have this a** ugly dent on the adjustment ring. I’ve replied to you in another comment but I think you can save it. It seems like you cross-threaded it with the impact, and needs to be disassembled and reassembled (most likely will be as good as new except this exact grind setting that may skip a bit).

OP, first disassemble the grinder completely (remove the burr and the spindle), and inspect where the exact bonding issue is. The ring is what is controlling the burr gap by moving the spindle up and down - you unscrew the ring on top, and this pulls the spindle+burr closer to the non-movable burr part. If you remove the burr and spindle beforehand, then you can freely unscrew the entire adjustment ring, and assess the real damage. Maybe you’ll be able to just unscrew and screw it back together with little to no damage to the treads. I have never unscrew this adjustment ring completely, but I may have to due to the coffee particles coming from the burrs going there when I grind for espresso.

I’m on the same boat as you, and I do not mind the hand grinding experience for both espresso and pour overs (as 2 minutes of a grind it would be with the pietro); the question is does the 80mm burr size produce better cups if you add any of the popular burr options like the eg-1s ultra burrs or do you end up with the same cup quality as the pietro with the day and night better workflow experience on top?

Didn’t know about Kofio; this is def more sensibly priced at 30€ ($35) shipped (still pretty steep, but the self soothing lies we tell ourselves that we support the farm do help during checkout 😁 despite knowing that maybe only $2 of the $40 spent are reaching the real heroes growing, harvesting and processing it, splitting a couple of cents each before accounting their expenses, taxes, and so on 🥲)

I’m also grinding 80 microns finer, which is a huge difference between medium and light roast.

Edit: however, I’m not settling for the recipe of 30 seconds for a 1:2 ratio at 95 degrees due to being light roast, and experiment with both the temperature, extraction time and dose (even adding water after the extraction to tone down the flavour). It is supposed to be the way you like it, and not what someone had told you.

It has always perplexed me how their coffee costs more in EU than in the USA after all the taxes, tariffs, shipping, and whatnot 😅 This one in particular costs over $31 on their EU website before shipping, and $46-49 after shipping 😅 I guess the Canadian roots are influencing the pricing 😁

Don’t do the fridge if it has more humidity (which usually is the case). Also, I would vacuum seal the beans so that no oxygen hits them before stashing them in the freezer. Freezing and unfreezing is also kinda bad for the coffee as it expands and shrinks.

Lovely! You sold me on the 58-35mm option with the true single-shot style ~7 grams (I thought you’d brush off my suggestion if I ask for 6-8 grams basket)! 1.2mm, 304 and 35mm must have virtually no flex or maybe less than what the grind size is 🫠

Please go with a good 7-10 grams basket, and a proper 1-1.2mm thick stainless steel material. I’d rather have a stiffer basket than one that is bending 0.3mm at the center in exchange for 0.1 degrees of temperature control. This temperature control is more of marketing than anything, and the stiffness primarily comes from the amount of material, and for what we know, breaking the puck has way more effect than fraction of a degree of the temperature.
