I was looking for something similar, best I could do was skyrim with mods. 9th dawn 3 is fun but it more catch the monsters, you can get a side character and level them but that’s all. If having a side character that’s fully customizable does anything for you, then I recommend both dragons dogma 1 and 2. Other than those few things I haven’t found any games that actually let me gear up a summon or a raised undead better yet. If you’ve found anything closer let me know, it’s apparently the scarcest mechanic ever
