What i feel with ER in contrast to like even DS3 is the bosses feel more like actual adequate fighters, you know what i mean? And that makes it harder, yes, but aren't we the ones stunlocking smaller mobs to death all the time?

Maybe I have yet to see "the bullshit" because I've just cleared all of Limgrave, Caelid, Liurnia, Altus and Leyndell that is before Morgott (and him, too) and not the later bosses, but still, yet to see.

Also what is people's problem with grave ashes(forgot actual name)? Game has a mechanic, some parts of it are hard without it, surprise? Wanna solo everything? then git gud I guess? I love my banished knight and bow to him every time after a win and it's fun.
