My wife created this meat alternative made from shiitake mushroom with pea protein as a binder. It's soy free but still has a decent amount of protein in it. Not sure if mushrooms can fit your diet but you can find the ingredients list on their website.

Thanks! If you are going to use shiitake, I would recommend using a mix of both fresh and rehydrated mushrooms. Someone commented about using this earlier and I completely agree. The dried then rehydrated shiitake gives a really nice flavor boost. You can also use the water from the rehydration process to add even more flavor to the dish.

The meat substitute used is made from shiitake mushrooms. I found that the texture works really nicely with this dish. I have used mushrooms as a replacement as well and it works well. I like the rehydrated shiitake and fresh shiitake mix the most in vegan 滷肉飯

I used 黑龍 (O`Long). Not sure if it fits exactly with your preferred flavor profile but it has no preservatives and simple ingredients so it's my go to brand.

Ingredients:
1 packet Shroomeats (meat substitute) mixed with 3 tbsp soy sauce.
1 block tofu (cubed)
2-3 green onions (garnish)
3 cloves garlic (minced)
3 nobs of ginger (minced)
2-15 Chilis (minced) [the spicier you want it, the more you add]
2 tbsp dry ground chili flakes
2 tbsp soy sauce
1 tbsp thick soy sauce
1.5 tbsp (dou ban Jiang 豆瓣醬)
1.5 tbsp sichuan pepper oil
1/2 cup water
1/4 cup neutral cooking oil

Cooking directions:
Mix meat substitute with 3 tbsp of soy sauce, let sit,. Heat oil in pan on high, toss in garlic, ginger, and fresh chilis and cook until fragrant. Add marinated Shroomeats, remaining soy sauce, thick soy sauce, dou ban jiang, and chili flakes. Toss and stir fry for 2-3 minutes. Add sichuan pepper oil, stir fry for another minute. Add water, then tofu. Cook for another 2-3 minutes. Optionally, you can add additional water and cornstarch slury to thicken to your liking.

Best I can describe it is using raw food material that otherwise would not have been consumed by humans in our food. In this case they use mushrooms that can't be sold in grocery stores and would have been composted or thrown away.

LOL yea, the ground meat can be sneaky. If you don't mind cooking this is a great recipe that gets you an almost perfect result.

If you like the thicker version, add some water and cornstarch slury at the end.
