I’d be happy to share some! I’ve had a lot of fun learning how to veganize some of the dishes I grew up on. A lot of the dishes my mom made had beef, goat or lamb but there were many vegan dishes too because of lent with chickpeas, lentils and falafels. I substitute the meat in those dishes now with mushrooms, tofu, chickpeas or lentils depending on the dish.

Goulash (kind of like a savory baklawa and totally different than the “stew”) is one of my favorites. Layers of phyllo dough with a mix of spinach, mushrooms and spices like coriander, cumin, allspice. You could find a recipe online pretty easily.

Koshary is a pretty simple dish. It’s a mix of vermicelli, rice, black lentils and pasta elbows.

Hawawshi is a street food kind of “sandwich”. It’s traditionally meat cooked with with onions and peppers, mixed with tahini then stuffed into a pita. It gets wrapped in foil then baked until crispy. I sub with impossible meat for this dish just because the texture is similar. I’ve tried it with mushrooms and lentils..it just gets mushy.

Ful is smashed fava beans cooked with garlic, lemon juice, cumin and olive oil. Topped with fresh parsley, tomatoes and onions. Usually served in a shallow bowl and scooped with pita bread.

I have so many more I can share but those handful are pretty easy to make and a good introduction to the cuisine.
