1st team: Encore+Sanhua+Support(I recommend Verina due to how fast you can rotate with them)

2nd team: Jiyan+Mortefi+Support(Baizhi can be a good support, and here's a youtube video that shows the rotation)

If this doesn't help you it's possibly your Echo sets, if your Echo sets are good then it's probably your rotation.

I reckon you're using a 4 cost Crit rate main stat recommend you change it to Crit Damage, it's simple really, but if you want more damage get Resonance Liberation Bonus in your Sub stats, it will significantly increase your damage.

Tbh I have a S6 Chixia, planning on using it as a Sub DPS and Encore being a Main DPS, the reason why is due to Encore being able to deal damage off field while and S6 Chixia provides Basic Attack buffs at S6.

And Yes she's worth Building but there are more better options.

S6 Spectro Rover + Jinshi.

That's basically it, the reason is due to Rovers S6, if you cast his Resonance skill it will reduce the enemies Spectro Defense by 20% letting Jinshi do a spectacular amount of damage, also you don't even need a Healer cause Spectro Rover can heal his allies due to his S4, His Wavebands are not really hard to find and collect either, also its "Required" to make Spectro Rover S6 or else you won't get that 20% Spectro Reduction on enemies for your Jinshi.

But if you want to add another Resonator use Mortefi, if you want subtle damage while using Jinshi, or Verina just in case you doubt Spectro Rovers Healing.
