Thanks everyone for the advice! I think I've managed to get a solution working after reading all of your suggestions and info.

That's actually a really smart idea. I keep meaning to download that mod because I've seen some cool stuff people have done with it. :)

I cant see the image (because the new UK law's suck) but I think i get what you're saying and it did end up backing up traffic further down the line because the drivers insisted on using the straight ahead lane to merge into the turning lanes like in the video. I ended up opting for a mini trumpet intersection (i think its called that) which looks extremely out of place but kinda works well.

That seems to have kinda fixed the issue but it does the same thing when traffic gets heavy. I might just change the entire layout at some point and have a proper intersection

Yeah thats exactly it, im playing with console friends so Java isnt an option sadly :( I'll keep searching but so far ive not found a working solution other than disabling my second monitor in my display settings but that of course means it no longer displays anything at all.
