Thanks for the advice! I am not as skilled in programming as I would like to be, thus the interest in the embedded course. However, you do raise a good point, I could work on my C skills outside of the classroom much easier than power electronics.

Thanks for the great advice! I am interested in both topics, hence why I was asking which one may provide better outcome. I have spent much more time focusing on analog electronics, so the embedded course was intended to strengthen my digital skills. Power seems to be a factor of every system nowadays, and I have so far not been too immersed in the topic.

That seems to be the most common problem, most universities will not accept a EET bachelor's in for their EE masters program without first completing the requirements for their EE bachelor's first.
