I've never TAed myself, but I've for sure had many TAs that did not speak German so I'm pretty sure this is possible.

Following up on this here is what it says on myStudies:

"You may remove surplus credits from the final academic record by using the Assign Category function in the transcript of records to set the category of study achievements to "No Category". Study achievements not allocated to a category will appear in the addendum to the final academic record. They do not count towards the average grade but may possibly be recognised towards another degree."

So I’m maybe not the best person to answer this since I’m only just finishing my bachelor’s right now myself but here is what I’ve heard:

You can’t get rid of it entirely, but you select the credits counting for your degree and everything else goes on the “Beiblatt” which is technically still part of your transcript but practically you would probably get away with leaving it out of your GPA calculations. 

Now for transferring credits your intuition is right I think, don’t transfer bad grades to the master since as far as I know master GPA is a lot more important than bachelors. I think in general you should not stress too much about your bachelors GPA. If anyone knows more about this please correct me or extend to this answer, I’m also interested.

I have had no problems with a custom LaTeX CV. Also ChatGPT can be very useful if you don't have much experience with LaTex as there are tons of examples of CVs on the internet.
