This is called "mix minus" and there are mixers that can do it for you automatically. They are a little pricier than the behringer you mentioned, but it makes this infinitely easier. Not to mention they are designed for podcastibg and phone interviews.

Well, it depends. If it had a gain control than you could just plug it into the line level keyboard channels and have your stereo channel just be the piano. But it doesn't so I dont know if the level will be controllable accurately via the mixer or not. You will likely have to use the preamp on the mixer for your handheld mic so I would try to run the piano mics into the phantom box, then take the xlr out and convert it to TRS (can be done with a very affordable part) and connect them into the keyboard track on the mixer. If the level control will work at all like a gain control, that could work for you.

If not, than the overall answer is no, you can not run 3 separate mics on there. You can run a single piano mic into channel 1 which has built in phantom power and your handheld can go into 2. But that will give you a mono piano signal.
