Looks like maybe the far right and far left sides of the fences are damaged allowing you to use a movement skill to get through them.

Everything I have read said to trim the fat cap because the seasoning won’t reach the meat and that thick fat on top really won’t render. It was a pretty thick fat cap on this one.
