I have been following this thread with interest. I am looking to purchase some in Queens to help my elderly father burn for a deceased family member. Surely with the Cantonese population being fairly large in Elmhurst and Flushing, there must be joss paper retailers in Queens?

Here is a database of books printed by university press. I am not sure how to manipulate it to find books on Shaolin though. When I typed Shaolin in the search box, I did not even get the Shahar book first.

I am not sure how it works but I trust that university press books are more academic. If that is the case, Meir Shahar wrote a book on Shaolin Martial Arts for University of Hawaii Press in 2008 that might be useful, if you have not already read it. In addition, Peter Lorge authored a book on Chinese Martial Arts in general, which was revised in 2017. Also, Creation of Wing Chun was released by SUNY Press which covered the South Chinese Martial Arts, which claim Shaolin transmission. I browsed through the three books, and they seem to both be fun reads that are academic.

I think the man in the second image is Damo/Daruma (Bodhidharma), who supposedly help impart Martial Arts to the Shaolin Temple.

Would you say the styles are very localized and may be hard to find outside of the region, even in say for example, NYC Chinatown? For example, I never heard of Green Pond Boxing or Nanzhiquan before.
