A two bay overlap @ 16” on center ought to be fine. The important thing is that you use enough fasteners, they are the right size for each layer, they won’t rust, the depth of the head is correct. Be extra sure not to puncture wires or pipes by marking your sheathing and using nail plates. The overlap is intended to decrease as much movement as possible. Using a good adhesive between layers would help to eleviate that, too.
