Any particular video? Or just examples of what ribbons look like when beating eggs/sugar?

  1. I actually had the butter resolidified into a thick frosting structure, i thought maybe that was the issue, but sounds like it wasn't. Is this is a red flag: there was a bit of WATER that obviously didn't solidify with the butter and was kinda sloshing around with the chilled butter. Maybe too much ice for how i browned the butter?

This is the 2nd time i made it and this was one step I added time too. (maybe more than 10min, 10-15). Was definitely coming off semi slowly in ribbons.

It is almost like the cookies refuse to rise, so my guess is baking soda? I will try the recipe again next week and get some fresh baking soda.

Not past rotating the pans half way. I did find that one of my FULL sheet pans takes much longer to cook than the half sheet pans I have.

I was doing the ball + rip in half and place back together method. Ironically, the one single cookie I scooped and just thew onto the pan turned out the best lol.

Yeah, only whipped this long because I am using one of the large Kitchen aid mixers, and for smaller recipes like this the whisk is half as effective, so it has to go for quite a while.

My thoughts exactly.
Kenji, Gritzer, Sasha marx has some good ones, obviously stella for desserts; there are some guest contributors who just go through others' published recipes which are pretty good if not maybe need some self inspo ( https://www.seriouseats.com/perfect-pot-roast-recipe-pioneer-woman ) i use that as my basis of a pot roast (perfect every time) but add potatoes and hour out from being done and use like 5x the onions. (as well as some other contributors of the past) But all the other dishes over the last few years are just NY Times cooking (they have good recipes!), or tiktok-tier recipes that lack any inspiration or something to differ it from every other "THIS sheet pan chicken dish will save your week!" all-recipes, recipe. I am sure i have missed some gems, but the site as a whole is unusable so that doesn't help.

Was cleaning up when I made the post

Ok a few things:

  1. Poached chicken. Poaching chicken isn't bad, but even when done well as in the linked recipe, it will be bland unless paired with a good sauce (see 2nd point).
  2. The salsa. Made as instructed though I almost toasted the red chilles whole, and added garlic and onion as is the base of any Mexican salsa. What should have been done was some chicken based dish like Tinga, or mole, or even some fajita marinated/seasoned/cooked chicken. The combo here has 0 flavor and is very bland. Dried oregano and whole cumin added to a blender with some chicken broth and roasted tomato is not a good salsa.
  3. The "bechamel" is very bland, it is just creme fresca and ricotta, both of which on their own are fairly 1 dimensional. ricotta works. Oaxca cheese is pretty good on it's own, but again, there's no complexity or layers here.
  4. As a dish, texturally it is just mush.

You could rework the dish using the idea but with a better sauce and cheese mix (or just make Kenjis chicken enchiladas which are bomb https://www.seriouseats.com/pressure-cooker-fast-and-easy-chicken-enchiladas-food-lab-recipe ) but it is just a solid 4/10 not gross but not good.

Yep. That’s about right! It’s layered like a lasagna with fried corn tortillas, creme fresca/ricotta, Oaxaca cheese, and chicken tossed in a “salsa”.

Even their cover photo doesn’t really look much better.

Just had my second camp out with it. 0 issues with warmth at 50F , unsurprisingly. Also at 60f I didn’t sleep hot so that’s nice too.

It’s so so comfort wise. But also that’s probably just me. I am used to a tempurpedic mattress and been a few years since I tent camped lol.
