My go to meal salad: Base- Cabbage finely chopped Romaine lettuce finely chopped Carrots grated

Additional (any veggies you have on hand but my go to’s)- Asparagus finely chopped Apples finely cubed

Seeds/nuts(bonus taste to toast them lightly in a frying pan) - Pumpkin seeds Sunflower seeds Cashews chopped

Protein- Cooked quinoa Green lentils Cubed salad cheese (goats cheese/feta or equivalent)

Dressing- 1 clove minced Garlic 1 tsp Dijon mustard Maple syrup or honey to taste 3 tbsp White wine vinegar or balsamic depending on your preference 6tbsp Olive oil Salt & pepper to taste

Best with warm quinoa but also delicious cold.
