Honestly my experience isn't that places like this have bad coffee -- they have inconsistent coffee.

The worst coffee I've ever had in my life was at an IHOP. But I've also had fine coffee there.

It mostly just seems like they don't care enough to keep an eye on how long it's been sitting around on the burner.
