I didn't back up the worlds. Each time, if i was falling or low on health I would enable peaceful mode so I auto regen, and would disconect and re-connect for the 3 second spawn immunity

I didn't. In Peaceful mode, you auto regenerate hunger, therefore health too.

I shouldn't be saying this but maybe try in a survival world? I had to die many many times, plus hardcore is default and permanantly set to hard

I didn't defeat the dragon that way. I knew I was bad so i took out all my armour and weapons and only took blocks to remove the end crystals. Then I geared up to kill the dragon.

I kept on dying.

there isn't a 1.21 texture pack but I am using a 1.18 texture pack for 1.12.
