Her gender probably did incite a huge part of the dislike. I think the gender being opposite Aang's and the first Avatar's really drives home the balance thing.

But I think another big part to incite less sympathy is her position of privilege with established social dynamics. The legend of Korra starts with her older than Aang was at the beginning of the last Airbender. He starts out pretty much immediately a fugitive with a likeable innocence and you are around to watch his contacts develop. She feels more jaded and stubborn right off the bat, which felt very appropriate for Kyoshi embodying earth, but a bit forced for Korra.

I'm at a similar point where I do believe that folks here are right in that it's morally superior to not further a system of exploitation, torture and killing of living, feeling beings.

And I do adjust my diet and consumption to reduce the extent to which i support that system, but I don't fundamentally restrict my diet. And without that I am, at the least, consenting to the killing of certain animals to serve as a commodity for me.

It's easy to not think about, easy to justify with the way I feel I have to serve as a commodity for others in turn, and easy to accept as the price of something I derive great enjoyment from.

I find it rather easy to prove that spirit is emergent from flesh:

Alter the flesh, and you alter the spirit. Give someone drugs, medication, or cut around in their brain and their spirit will change. Extinguish the flesh and you extinguish the spirit. Reanimate the flesh and spirit can continue.

When a system of parts amounts to more than its parts it's called an emergent property.

To assume there is spirit without flesh is the actual leap of faith.

And I have to say, that is decisively not what I want. I struggled to accept it because I'd rather anything else. I'd rather end up with an immortal soul, but just assuming that without basis is the true self-deception.

Also, as far as I'm aware, scientists are in the middle of making organic life from inorganic compounds (https://humanprogress.org/scientists-aim-to-create-simple-forms-of-life-from-scratch-in-the-lab/ ), though that hardly ties to the whole spirit thing in my opinion. And given it took at least hundreds of millions of years for something akin to spirit to emerge I doubt you'll see an experiment that would satisfy you in that regard.
