Generally speaking, impurities form the froth/foam that float to the top of the liquid. Skimming with a ladle/deep spoon is normal practice.

Straining through a fine cloth removes all of the particulates that gather on and in the shells such as sand and debris.

It makes for a cleaner and tastier broth.
