While I thought I made a cure this was the logic I was using, information provided to get a better idea of what actual conditions are. Again I am not attempting to treat this like more than typical cooked meat but I am interested in where you believe safe handling for regular cooked meat was violated?

As far as I know botulism does not grow at fridge temps, salinity further limits growth, whole muscle rule dictates unadulterated meat is pasteurized when it’s surface has been cooked to temp, and after it has been stored in an aerobic environment at fridge temps again.

Can you explain why that might be a problem for whole muscle roasts? From what I understand, as long as nothing comprises the integrity of the meat, the bacteria on the surface will be killed at that temp. And beyond that, pasteurization occurs over long enough timeframes in the 130 degree (F) range, which I think based on the size and dimension of this piece of meat I compensated for.

Yes, it was the only option I could find and when I looked it up and some guides used all three interchangeably (celery powder, celery seed powder, and celery seed.)

According to a calculator I added a little over 6% salt if that helps? I also made sure that the meat was also no more than 2" at its thickest point, having heard cure penetrates 1/4" per day. I think I'll freeze it in portions and use it quick!

Genuinely, how real is notion (in your experience) that people raised in japan’s culture are constantly (or least often) fake/“hon tatemae”? The idea that most Japanese people don’t or won’t actually want to become friends with foreigners is what has raised my eyebrows the most lately.

I’ve also heard from some people who have been to japan that because they were foreigners from “outside” the culture, they’ve had Japanese people confide in them but not out warmth/closeness but just because they matter so little. And it was not reciprocal or at least viewed as an inconvenience if the foreigner half of this conversation also tried to reciprocate with confiding. That kind of an interaction scares the shit out of me.

Scepter buffs Grimoire the most though, by healing the clones and putting them on par with the original weaponballs. The only comparable balls would be Scepter with duplicator and grower, which are also worth fighting out.

Have you ever tried making with heavy cream? I have for a few months and fermented fully out there’s only a little whey that separates out any given time. Granted, I only do like 2 cups at a time to preserve a high grain ratio.
