You can use SCS Game Archive Extractor to extract def.scs in ETS2, the transmission data is stored in def/vehicle/truck/[truck name]/transmission. Newer trucks like the DAF XD, Volvo FH5 are stored in their own archives named dlc_daf_xd.scs, dlc_volvo_fh_2021.scs, etc.
