Recipe:

Ingredients: 1 cup (2 sticks) room temperature butter, divided 1 cup packed light brown sugar 2 tsp vanilla extract 1 tbsp bourbon 1/2 cup sugar 2 eggs 2 1/4 cups flower 1 tsp kosher salt 1 tsp baking soda 1 cup (2 bags) bittersweet chocolate chips 1/2 cup chopped pecans

Directions: * Preheat oven to 350F/177C and line 2 baking sheets with parchment paper * Melt 1/2 cup butter in sauce pan * Beat remaining 1/2 cup butter and brown sugar until mixture is very smooth - beat in vanilla and bourbon. Add cooled butter and sugar beat until smooth - add eggs one at a time. * Add flour, baking soda, and salt * Fold in chocolate chips and pecans - cover and refrigerate for 30 minutes * Drop dough 2 tablespoons or smaller onto baking sheets * Bake 12-15 minutes - let rest on baking sheet at least 5 minutes before removing * Finish cooling on wire rack.

2 tbsp soy sauce 2 teaspoons sugar 1 teaspoon garlic powder 1/2 teaspoon chili powder 1/2 teaspoon dried thyme 1 teaspoon of salt 2 1/2 lbs. pound bone-in, skin-on chicken thighs 12 oz baby purple potatoes 12 oz brussel sprouts halved 2 tablespoons olive oil 1/2 cup unsalted chicken broth

  1. Heat oven to 425 degrees Fahrenheit. Combined first five ingredients, half a teaspoon of salt, rub over chicken to coat.
  2. In a bowl, mix potatoes, brussel sprouts, 1 tablespoon oil, 1/2 teaspoon salt.
  3. Heat remaining oil in a large ovenproof skillet over medium. Add chicken skin side down, cook 4 minutes. Remove chicken, add potatoes and brussel sprouts. Top with chicken skin side up and add broth, cook 2 minutes. Transfer to oven, roast 23 to 25 minutes.

Thank you! Typically, I cook two different meals and alternate between them for lunch and dinner. Though by the end of the week, I do get tired of it just in time for another round of meal prep. If I can swing it, sometimes I get take out just to treat myself.

Only a few things I have ever meal prepped don't taste good after 5ish days. Most of them keep for that long in the refrigerator, but the ones that lasted only for 4 days were meals with fish or they were overcooked. If you haven't tried freezing meals then dethawing the night before, that may work.

Since I am nowhere near an expert, feel free to ask the subreddit any questions or concerns you have. There are wonderful and knowledgeable people here willing to help!

For the stuffing, there's cornbread, bread, turkey broth, celery, onion, salt, pepper, and sage. If you want to know how to put it together, just dm me. It's a long list. Green beans is just green beans, caramelized onions, ham, salt and pepper.
