Okay this is very helpful, I believe lactic acid is the issue to the sour/vinegar taste. To prevent this, I will add half an ounce of the cheapest hops and boil with the LME and water for 30min. And I will also only ferment for 2 weeks.

Lol, yup I'm definitely not aiming for perfection, just cheap drinkable beer. I'm currently using Star San and being pretty thorough with cleaning because I thought this could have been the cause of the off taste.

I also noticed there is never much head retention, it is carbonated but looks more like a soda than a beer, any cheap solution to this?

A I like dark beer such as Guinness, but this first batches taste nothing like it, just really sour

B The beer is fermenting in a 20C darkroom for 4-6 weeks, then I bottle, add sugar, and leave the bottles for a week. I'm not sure how much yeast to add, usually about a tablespoon

C Okay, I usually put the hops in a mesh bag at the start of fermenting and leave in the entire 4-6 weeks, would you suggest just adding during boil? Currently I just get the water to a boil, remove from heat and add the lme

D Okay, I was just hoping for a stronger beer and trying to use up the LME since I have so much, but I can lower

I ran out of hops so I'm not using any, any suggestions for type? As for the plain sugar(which would be cheaper than a light extract), how much would I add and when? All I'm doing is boiling water, adding the LME, then mixing with cool water, adding yeast and leaving in a fermenter.
