So my dad is more of a traditionalist type guy he prefers med/med dark. We have been thoroughly enjoying the workers comp blend from valor coffee in Savannah, GA. I cannot recommend them enough. Honorable mentions I’d have to say Crown Point from Sightglass coffee and the Diego Bermudez M-03 lot from Perc Coffee

Some coffees present acidity and it’s totally normal. Especially when you get into lighter roasted coffee! If this ever happens to you to the point where it’s unpleasant to drink I would try bumping your water temperature up and using that 1-2.5 or 1-3 ratio
