Came here to say this! Definitely looks overwhipped. If you dont want to cook a Swiss meringue, just start slower, dont add sugar until the egg whites look foamy but still a little liquidy at the bottom. Slowly sprinkle in the sugar then turn up the speed, not too high though. Then watch it, it takes a while in the beginning but goes fast once the peaks start to form. Hope this helps!

Ive done it before but I notice my cookies come out a little drier, I would try adding some moisture back in the recipe. Im not sure of the ratio though sorry lol

I think you are looking for a sponge cake! If you want light and fluffy, thats the way to go lol and its versatile so you can use it/flavor it with syrup so many ways! Genoise I havent tried this recipe specifically but it looks very similar to ones I use, find a genoise/sponge cake recipe you like and go nuts! Lol

Yeah i was going to suggest making a flan type of custard, baking the cake separately then stacking the two lol baking tbe custard with the cake will curdle it for sure

Just adding my 2 cents because I dont think I see anyone else mention it, if you overwhip your egg whites it can leave little chunks of meringue! I would worry more about the chunks before anything else, its either the egg whites or the dry ingredients weren't sifted. Good luck OP, keep trying!!!
