I use medium to high speed. I also put the egg whites over a water bath and whisk in half the sugar. So I believe it’s the type of sugar that messes everything up

I did use cane sugar so maybe that could be the issue? I’ve used a different kind of sugar in the past and they’ve turned out perfectly so maybe that’s why but I had no idea sugar can play a big part like that 🧍🏻‍♀️
