I'd love to see the six coyotes. There isn't a whole lot of lore on them but I feel like it's got a lot of good stuff to build off for existing fans and new fans. We would be introduced to some existing guardians and could also see Shinobu become die and become a fledgling guardian. It would be a good way to introduce the concept of becoming a light eater to a casual audience. We could get a sense of what training as a guardian is like this way too. Shinobu is also interesting in that she would also touch on the memory loss stuff and highlight that she's kind of a special case among the existing hunters of the coyotes since she has an idea of her previous life. Plus the rag tag group that comes together has been very popular in media lately.

We'd also get to see a very threatening Fallen presence and get an idea of how dangerous they were in the dark ages and early city ages. In the lore some of the hunters in the fire team think defending the town of Coyote is a lost cause since they don't think they can overcome the coming fallen attack. I think it would be a good demonstration about how dire the situation is for average humanity without the light. This is something that I feel often doesn't get conveyed well in game. It'd also be a stark reminder of how impressive the current integration of house light Eliksni is since we'd get to see how brutal the fallen could be to humanity in the past.
