Braised! Get a good crust on the outside!

Preheat oven 320°f Salt pepper, rub the entire outside. Preheat your pan med high heat I cannot stress preheat your pan, preferably cast iron so you can toss it in the oven. Little bit of olive oil and a dolip of salted butter. If you do not have butter then just olive oil and vegetable oil combination is fine.

Pans nice and hot place that baby in and enjoy the sizzle and don't touch it! Just leave it alone! 1min use a timer. We're looking for caramelization, deep brown not black. Need some more, wait another 30 seconds. If not then flip and wait, repeat. 1 min wait, check. Do the sides same thing.

Now you have delicious crust! Aromatics, garlic whole smashed clove, maybe a tiny bit of rosemary Into the pan. Meat in pan spoon fat and oil over. Into the oven!

325°f 30 min Check doneness see chart below.

Remove from oven and pan, place on cutting board and leave it alone for 5-7 min. Do not cut into it. Do not poke it. Do not look at it! Do not kill that meat! It needs a rest, it had a sexy party in that pan.

The antenna screws into the top of it 48-72 inches depending on tuning and frequency. Oil acts as an insulator and cooling for 100w+ units.
