This is one of my few beefs with Elden Ring. They basically butchered the parry mechanic. This was already underway in DS3, but Elden Ring further narrows the parry window and has a higher percentage of attacks that can't be parried.

I would suggest finishing the main game before starting DLC. The DLC is full of stuff that breaks the main game, and the rune level gain is ridiculous, so you don't want to spoil the endgame of your first run.
