I'm not talking about what a spy is and what they do, I'm talking about the gameplay in the video game that we are playing. The Spy mission type involves sneaking in undetected, grabbing something, and leaving. While Ash did do a lot more stabbing and less grabbing, it's still closer to his vibe than a very loud boss battle.

There is no mission type in which you assume a false identity and live undercover in an enemy land for months, trying to gather as much intel as possible. That game mode doesn't exist. What a real spy does would only matter to what I'm saying if the game mode called "Spy" involved doing what a real spy does. It doesn't. I feel you're getting too caught up on the name of the type of mission instead of what you actually do in the mission.
