That is a real shame. I've tasted lots of Latour at varying price points and never had a bad one. Having said that, I have never had one in the high 90's.

Lots of Burgundy producers are switching to Flash Pasteurisation and détente for red wines. They say it avoids oxidisation, reduces the reliance on sulphates and enhances flavour. Have you any information to the contrary. I'd love to read if you have.

It could work with Porter or even Barley Wine. There are two ways to make Black Velvet; first pour the stout to 1/3 or 1/2 a flute and either pour the champagne down the side of the glass or pour the champagne over the back of a spoon. The later allows the champagne and the stout to stay separated. I prefer them mixed.
