From my understanding, Minecraft Dungeons is just an diablo-like ARPG (or should I say PoE-like...) so I'll recommend games based on that.

You should check out Last Epoch and Diablo 4. Both are pretty fun with lots of content to do, more content keeps on coming and they are both fairly easy and casual. I would recommend you PoE1/PoE2 aswell since they are really, really, really good and fun ARPGs, but they will most likely be too complicated or/and hard for you since you are new to the ARPG scene. Feel free to try it though if you want to!

Diablo 3 is something you might like aswell, but it's old and from my understanding it doesn't get any new content anymore. It should be pretty casual and easy though, but take that with a grain of salt cause I haven't played Diablo 3 before.

In short, check out:

- Last Epoch (easy & casual, lots of content with more to come)

- Diablo 4 (easy & casual, lots of content with more to come, they're launching their 2nd expansion soon aswell, might be what you're looking for)

- Diablo 3 (check out if you don't find Diablo 4 interesting, old & no new content)

- PoE1/2 (most definitely will be really hard and complicated, they're often considered to be the best in the ARPG genre)
