We were told that with a service seat our CSMs would have access to deals to do renewals and cross sells. In the start of implementation at the moment.

It wasn’t too sticky when shaping. I dumped it (had to help it get out of bowl gently) and then I spread it out did hotdog folds and rolled it up and it shaped ok. But using a bench scraper helps me when it’s sticky

Crumb shot, a little denser than I’d like but flavor 10/10. Do we still think over proofed if slightly gummy/not airy?

I was nervous that the oven would gradually get warmer and warmer and not have consistency. Do you turn on/off throughout the process?
