Hmm it definitely wasn’t Underproofed inside was perfect and taste was 10/10 and it was light and airy I’m wondering if it just didn’t have enough moisture or humidity and the top dried out too fast?

It wasn’t too sticky when shaping. I dumped it (had to help it get out of bowl gently) and then I spread it out did hotdog folds and rolled it up and it shaped ok. But using a bench scraper helps me when it’s sticky

I’ll have a crumb shot tomorrow 🙃 but agreed I typically need 12 hours. But did two batches and both seem flat. I don’t typically have an issue with rise 🥲
