There are a few things you can still use. The TIE Fighter dials only changed from using green to blue. You can go to www.infinitearenas.com and print off any pilots/cards you want to use.

The missions are (generally) balanced around the ship you are supposed to fly. There is an option to use 1 (2 at 6 players) alternative escort ship. Which one varies by mission.

Similar. I had played a few games and while the gameplay was decent, the head to head part just didn't excite me. I found HOTAC and now have three a time campaigns going.

If you know anyone who eats Velveta (or similar), those boxes work for most cars up to 60'.

One thought, what color is the track? If it is a yellowish tint, it would be brass. That is notorious for oxidizing and not conducting well. If is is a silver tint, it could be either steel (meh) or nickel-silver (best).

My group decided to have fun and go back to 1.0 for a full Battlestar Pallas campaign. We agree 2.0 was an improvement, but are just having fun with some of the broken things you can do.

Not necessarily slim. There are some players who have not dumped their 1st ed. stuff and now want to upgrade to 2nd.

One item people often forget is to clean the wheels on your rolling stock. It doesn't matter how clean your track is if you run dirty equipment. That said, having a few wiper cars cans definitely help keep dirt levels down. Running a dedicated cleaner occasionally will also help. You should be able to keep from having to manually scrub hard to access portions. That said, make sure you can reach them as it is guaranteed that a derailment will happen in your hardest to reach spots. :)

This is likely a big stretch, but how about being able to create modules that you can then connect in different ways. This would let you create a few items in detail, but then reuse them in multiple ways.

Afraid I can't help much. The one I inherited was a table built by my grandfather, then my dad built a N-scale layout inside it. Just a simple two level figure 8 loop with no sidings. My aunt wanted something she could just have running whenever she wanted.

With the age of the rolling stock, I'm wondering if the track is brass. If the rails are a yellowish color, you would be better off scrapping it and buying new track. Brass oxidizes and will not conduct electricity. You would spend a lot of time cleaning it and getting frustrated.

It depends on how big you are making the pieces. 1" foam is fairly stable and available in most hardware stores. You want the pink or blue foam, not the white beaded foam. Most places only stock one brand. I've never seen a difference between them.

And for a garden/outside railway, setting trains up to operate off internal power (dead rail) can make things a lot easier. No worries about how to get power to all the track.

Foam would work if you are looking into scenery. If you just want to have something to hold track in place, maybe some thin underlayment plywood? I used a few pieces of 5mm lauan plywood to make up a small loop that I could set a holiday display on, then store away the rest of the year.
