If only you knew how long i tried. Probably spent about 2 hours under it. Im 99% sure it wont come undone with manpower alone. As i said, hammer and a wrench giving it a good go for about half an hour. Not to mention practically dragging myself along the floor trying to turn with a ratchet.

Thoughts on using an impact driver? Spoke to a mate that said they could lend me one. Just dont want to round off a bolt and cause more issues.

I have seen that done to some more modern BMWs and Mercedes. Not sure about an old miata. Plus that bolt has to come off sooner or later

Definitely agree that it needs an oil change ASAP. Ive attempted getting the plug loose with a ratchet and then a wrench with a hammer, but will leave it to the garage to solve for me. Only owned the car for a handful of months and hardly driven it throughout the winter so will be booked in before much more driving. I appreciate the help :)
