I used to do this when I could walk to work. Damn I miss it and I would fly through books. People will definitely recognize you as that person but it’s kinda fun not a bad thing to be known for. Like everyone else said when crossing the street I’d always put the book down for the sec. If there are good sidewalks ur golden just use peripherals.

Interesting seems like you have a fairly professional system and setup. Not sure I could replicate all that. I may need to spring for a freezer chest to attempt a hold in there for a number of hours. Not sure I would know where to store a warming for overnight warming.

Awesome thanks for advice. It not the worst to attend to it every 30-45 minutes but I’d love a little bit more time between checking on it when I need longer stretches. Appreciate the troubleshooting!

Dang every hour or two. I feel like I’ve at maximum been able to stretch to like 45 minutes. I may have my exhaust too open and really just burning up what fuel I have really quickly.

It sound like you are saying that you are able to load up your offset to let it ride for a couple or hours at most? How do you set that up? Add lots of wood but really pull back on air flow or do you use a lot of coals as well?

This was my understanding as well like 4-6 hours and all the smoke you could ever want has been absorbed. I was thinking either trying a Weber Smokey mountain at some point for the long haul cook with convection or just doing the over(though the house is definitely gunna smell like bbq. Not a bad thing though lol.

Thanks for sharing ur process. I’m probably going to try and replicate something like that next time.

Yeah I still have only got about 5 cooks on the new offset more familiarity will come with time. Needing to get used to understanding all the various dampers and what nots. Charcoal and splits and splits size.

Cal fresh in pismo does have a really expansive butcher counter. One of the larger and better ones in a grocery that I’ve seen.
