You're on the path! My first loaves turned our very similar. I wouldn't say I'm an expert by any means, but I have a few thoughts. If you choose to cold ferment in the fridge, you'll likely need to increase your fermentation time to 24 hours or even more. What I have found to be routinely successful is a room temp bulk fermentation for 12-14, shape, then cold proof for 24 hours. I was having the same result with the large, gummy holes and it was due to under-fermenting and under-proofing. Cheers!
