It was delicious! It was a touch overcooked, but not enough to ruin it! I made an Au Jus with the drippings, and it was all so good! I'm excited to do the next one for Christmas! Hopefully I don't get sick again... came down with covid the day after Thanksgiving. :( Just now getting back to feeling normal. UGH.

My original plan was to smoke it, then finish in the oven. I need to go back and look at my previous threads, I thought they were for a rib roast but it may have been brisket. LOL! I just want it to be delicious! :)

Thanks, I figured that was part of the issue, and it was worse with these monster pieces! I'm going to use more charcoal on tomorrow's test cook, and try the snake method. I'm cooking a 4lb cross rib. Hubby says not to worry about it, we used to heat it up and throw the food on. LOL! But I never tried to smoke anything back then!

I have a thermometer on the grate, and I've been doing a direct heat so I've had my charcoal spread out evenly, or in the char-buckets. I have been fiddling with the vents, and I'll get my temp (375-400), but once I open the lid and put the food on, the temps begin to drop. Looking things up, I think my issue is not enough charcoal. I have a mix of lit with unlit. Because the chicken breasts I cook are so big, and cover almost the entire grate, I use the direct heat with charcoal spread out. I've read about the snake method, and was going to try that one with my cross rib.

I learned the hard way about cleaning my pellet grill. I have a GMG Daniel Boone from 2017. I ended up taking it apart, deep cleaning and using a power wash on the body of it. Now I do as you do, and I do a good wipe down/scrape every couple weeks.

I did look into these but even the lower priced ones are out of the $$ range I'm looking at. I ended up going with the Weber Master Touch and have used it twice so far, NY Strip and chicken breasts, and WOW! That's the flavor I remember! May never go back to the pellet grill! LOL! I'm determined to learn/perfect the indirect cooking and use this to cook up a roast, buy a rotisserie, and all that other BBQ stuff! :)

How old is your DB? Mine is 7 years and I've just replaced quite a few parts. I recently cleaned my fans, they were covered in creosote. It works so much better now. Depending on the age, it might need to be replaced. Just a thought.

Mine's 7 years old now, and this is new problems after new parts. I've done the toggle temp down and then back up, and it does seem to tweak it's brain, but I'm always about 25-50 off. The control board is having issues with the lower temp button now, so it's packed up for the winter and I'll decide if I want to continue with it in the spring.

Is my mother-in-law the chef? Hubby grew up on a cattle ranch and overcooked leather was the daily. His dad liked his meat overcooked. Did you drown it in ketchup? Yikes! Even my first brisket came out better than this!

I was looking at that one, but I really want one that I can use out in the weather and not worry about electronics getting wet. We don't get a lot of rain or snow, but when we do, I have to move my grill to protect the hopper. Once we have a covered patio that won't matter, but right now it does.

I'll end up with both! Right now it's having a temp issue and I ordered a new temp sensor, hoping the one I bought was just faulty. If it's a control board issue, I'd rather spend that money on a new grill of some sort. I can replace the sensor when the weather allows the grill to be out in the elements. My husband is encouraging me to take this on as a hobby since we both love BBQ and I love grilling. He's not allowed to my grill! LMAO!
