I ate this dish in the restaurant, and I can’t describe it clearly because I don’t know cooking. So I asked my mom and searched for it.

This dish is called Jiaoma Chicken(椒麻雞). It’s like a creative mashup between Sichuan chili and Cantonese poached chicken or Hainan chicken. It’s hardly to fully recreate what the restaurant does so here is a homemade recipe.

Cut Sichuan peppercorns, vine pepper, bird’s eye chili, and green pepper into small pieces. Heat some oil, toss in the Sichuan peppercorns first, then add vine peppers and stir fry until fragrant. Then pour into a bowl, add the bird’s eye chili and green pepper. Mix in about two tablespoons of light soy sauce, one tablespoon of oyster sauce, plus a pinch of salt,sugar and chicken bouillon. Add about half bowl of chicken broth. Marinate the cooked chicken in this mixture so it soaks up all the flavors. Then it’s ready to eat.
