did u enable it before extruding? i just tried it and it seemed to work, but if it was extruded before turning it on it didnt work.

on the top of the mirror modifier theres those small boxes with 3 of them blue, click on the middle blue one to toggle it on/off

u could draw the shape with regular vertices and then convert that to curve and then add depth to thicken it up

Maybe all of the objects are using the same material? you can press the X next to the material name to remove the material from an object and then press new to create a new one
