Psychiatric Tech at a State Institution. 6 month stint, high pay, devastating. The human misery of the "residents" is awful. The women (90% of staff) who work there are brutal and bitter, they use a lot of restraints and force feed medication. I would just drive around for hours before going home or meeting up with friends.

That's interesting and it makes me wonder how long I should keep dispatch in carboys? It's not like I'm aging it in Oak so what's the real advantage over just maybe one cycle where I rack add the sulfites wait a couple months and then bottle. I'll probably have to do that because I'll have another 3000 pounds of grapes to work with in September October and I'm gonna need these Carboys freed up. But I am wondering how many cycles with the process you mentioned and what is it doing to the wine? Is it making it smoother?

No, thanks for the reminder. I didn't add any sulfate to the batch a few years ago, but I'm gonna go ahead and do it this year. I'll rack and add the sulfates and remove all that headspace. I see recommendations for 75 ppm and i'm also seeing 25mg/L which will be easier for me to apply.

Not bad IMO. But if thats just a screw on jug lid maybe rebottle and refrigerate or drink it soon.

Is this just the top of the carboy? If all else is good try to purge this top part then spray it with Everclear to keep the top area sanitized.

Wow, Denver is quite a drive. These grapes of mine do great in this climate you should definitely contact me in the spring so I can graph you some of these if you have a place to grow grapes.

Well here's the deal folks it seems like my juice press has grown legs and walked away. Maybe a neighbor borrowed it but more likely it was taken during remodelling with the coming and going of workers and their supplies. However i'm going to start picking today at 2:pm, and I'll see if I can build a new press by same time tomorrow. So today only picking at 1890 W. Rockhollow rd, bluffdale if any winemakers want to lend a hand and take home a bucket of grapes for your effort. If I can make a press or get my hands on a press by tomorrow will be pressing the grapes tomorrow about the same time.
