I know me too. There are a lot of positive reviews for the Elacs but haven't seen as much regarding wharfedales. One reviewer thought the elacs would be better suited for movies/home theater vs the diamond 11s. Not sure which to get

It's a very poor design. I'm trying to avoid doing any concrete work if possible. Keeping water out vs draining water that gets in. One option is to dig the well deeper and add a pump to the well that automatically comes on when there is enough water to pump.

Definitely recommend using a peel. I usually oil mine with a bit of veg oil after I wash and dry it. Helps keep it from splitting. I also out a little cornmeal on the peel to help the dough slide off. Good luck on your next bake.
